Almond Joy Cake

Yup! I did it. I managed to take everything we love about Almond Joy candies and turn it into one elegant and delicious cake. Serve this at your next party and your guests are sure to rave.

Ingredients
  • 1 /2 sticks, unsalted butter, melted and cooled
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons almond extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ¾ teaspoon baking powder
  • 2 teaspoons cocoa powder
  • 1 /2 cup almonds, slivered, sliced or chopped
  • ¼ cup sweetened coconut
  • ¼ cup chopped chocolate or chocolate chips
  • 1 tablespoon heavy cream
Instructions
  1. Preheat oven to 350 degrees. Butter and flour a 9-inch spring-form cake pan and set aside.

  2. In a large bowl, combine melted butter and sugar and whisk until smooth. Whisk in eggs and almond extract.

  3. In a separate bowl, combine flour, salt, baking powder and cocoa powder and whisk until combined. Add wet ingredients to dry ingredients and stir until mixture just comes together. Pour batter into pan. Top with almonds and coconut. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  4. Melt chocolate and heavy cream in the microwave, about 30 seconds. Stir until smooth. Drizzle over cake and serve.

Tips
Don't have heavy cream or chopped chocolate? Drizzle cake with chocolate syrup.
