Who doesn't love cupcakes? Who doesn't love ice cream? These Mouse Cupcakes combine the best of both worlds, cupcakes and ice cream, and are adorable to boot. Your kids will love helping decorate the cupcakes to look like mice!

Ingredients

• 1 chocolate cake mix
• 8 scoops vanilla ice cream
• 16 sandwich or mint cookies
• small candies (red hots, M&Ms, or Skittles )

• shoestring licorice
• muffin tin
• ice cream scoop

Instructions

1.
Prepare cake mix according to package for cupcakes. Fill muffin cups 2/3 full.

Bake and let cool completely and remove from pan.
3.
When cool, top each cupcake with a scoop of ice cream.
4.
Decorate to resemble a mouse using 2 mint cookies for ears, candies for eyes, nose, and mouth.
5.
Cut and insert licorice for the whiskers. If melting has occurred place in the freezer for ½ hour before serving.
