Ice Cream Watermelon

Kids tend to get "antsy" during the summer months, and parents must muster all the creativity they can. This super-cute, cool-down recipe could be the cure you need for restless children!

Ingredients:

  • 4 cups green ice cream, sherbert, or sorbet (try mint, lime, or green tea)
  • 4 cups pink ice cream (try strawberry, rapberry, or bubblegum)
  • ½ cup chocolate chips
  • Large bowl
  • Medium bowl (that can fit onside the large bowl)
  • Aluminum foil
  • Plastic wrap
  • Spoon
  • Platter

Preparation:

1. Line the large bowl with aluminum foil and chill it in the freezer for 30 minutes

2. Using a wooden spoon, shape a 2 inch layer of green ice cream around the inside of the large bowl covering all the sides

3. Cover the medium bowl with plastic wrap and lay it in the larger bowl of ice cream to help it hold the shape and return the bowl to the freezer for 2 hours

4. After the green ice cream has been sitting in the freezer for about 1 ½ hours, start softening the pink ice cream to a consistency that can be stirred

5. Stir the chocolate chips into the pink ice cream

6. After the green ice cream has been sitting in the freezer for about 2 hours, remove it and take out the medium sized bowl

7. Spoon the pink chocolate chip ice cream mixture into the bowl with the frozen green ice cream

8. Freeze until firm, about 3 more hours

9.When the ice cream is fully frozen, place the bowl upside down onto the platter so that ice cream slides out. Remove the aluminum foil

10. Cut into wedges and serve!
