Cherry Fool Mousse Recipe

Perfect for April Fool's Day, this recipe is so decadent and pretty, you will "fool" your friends into believing it took you all day. In fact, it's simple and delicious—my favorite combination! This dessert is perfect for a holiday party, but it's also easy enough to throw together as a sweet ending to any regular weeknight meal.

Ingredients
  • 1 pound bag frozen, pitted cherries, thawed
  • 1 cup heavy whipping cream
  • ¼ cup plus 1 - 2 tablespoons granulated sugar
Instructions
    1.
    Place cherries and ¼ cup sugar into a food processor and puree until smooth. Chill puree in the refrigerator for about 20 minutes.

    Using a whisk attachment on your electric mixer, whip heavy cream until soft peaks form. Add in the 1 - 2 tablespoons of sugar and continue to whisk just until stiff peaks begin to form. Do not over mix.

    Remove bowl of whipped cream from mixer.

    Remove puree from refrigerator.

    Using a rubber spatula, gently fold the cherry puree into the whipped cream. Don't over combine the puree, it's best to allow some red streaks to remain.
    6.
    Pour the Cherry Fool into four clear glasses (such as martini glasses). Cover each glass with aluminum foil and refrigerate for up to 4 hours.
Tips
  • Make whipping cream a cinch by chilling your mixing bowl and beater attachments in the freezer for about 15 minutes prior to whipping your cream.
